An Old Favorite: cranberry Surprise Pie – November 20

Over the last couple of weeks, doing events and radio shows with ONE GOOD DEED (the book), I’ve been reading the story about the now-famed Cranberry Surprise Pie. And every day, when I look at the stats for this blog, a whole mess of people have been checking out the recipe. So if it’s your first time or now an annual favorite for you, here’s our family’s favorite Thanksgiving dessert. Don’t forget the vanilla ice cream and whipped cream. And most of all, Happy Thanksgiving, from my family to yours.

2 cups fresh cranberries

1/2 cup walnuts, chopped

1 1/2 cup white sugar

3/4 cup butter, melted

2 large eggs, beaten

1 cup flour

1 tsp. vanilla extract

Preheat oven to 325 degrees. Butter a 9 1/2″ pie plate. Pour cranberries into bottom of pie plate and sprinkle evenly with walnuts and 1/2 cup of white sugar.

Mix 2 beaten eggs with 3/4 cup melted butter, 1 cup sugar, vanilla, and 1 cup flour. Pour over cranberry mixture.

Bake 50 minutes at 325 degrees.

One of the couples with whom we were supposed to spend Thanksgiving is unable to make it due to a back injury. We’re going to surprise them and send over a platter of turkey dinner for two, which is going to include a miniature version of cranberry surprise pie! Thanksgiving good deeds all around.
